Futurist = an intentional space created to allow and engage Dogwood’s collective imagination. The name Futurist has evolved over the years for Dogwood; exploring different coffees that push the boundaries. This coffee uses a washed fermentation method that imparts a unique fruit forward flavor profile.
This coffee from Finca Las Flores is a Bourbon Aji variety primarily grown in Colombia, named for a subtle peppery note from its mucilage, similar to the aji chili pepper. Genetic tests show it's an Ethiopian Landrace, not a true Bourbon mutation, often found in Huila. It's known for complex flavors of tropical fruit, floral, citrus, and spice, with exceptional clarity and sweetness.
This Bourbon Aji goes through 12 hours of oxidation in the coffee cherry followed by a thermal shock at 50°C. Afterward, the coffee is pulped and undergoes 80 hours of fermentation in plastic cans. It's washed and then dried in dehumidifier machines for 60 hours. What results is a super juicy cup of coffee that is exploding with papaya and passion fruit notes. We are all super thrilled with this coffee, it's the perfect thing to wake up your senses in the dead of winter.
