    El Sendero is a farm owned by Andres Martinez, a young Biochemical Engineer who has a history of coffee-growing roots, which motivated him to a pursue a profession in the coffee world. We've selected this Caturra Floral from Andres for it's bright floral characteristics and strong notes of bergamot. This is a semi-washed coffee, meaning it is depulped without water and then fermented with water, this allows for the development of sweeter, fruitier notes while maintaining the balance and clarity we see in a washed coffee. 

    The coffee cherries are hand-harvested and floated for selection, the cherries undergo an initial fermentation in closed tanks with beer yeast for 48 hours. After depulping, the coffee goes through a second fermentation in closed tanks for 24 hours to enhance the floral characteristics. Then the coffee is dried on raised sun beds in three stages, by increasing the sun exposure every five days leading to total drying period of 12-18 days. 

    We are really enjoying the floral characteristics of this coffee, the bergamot-forward aromatics develop beautifully through the mid-palate, while subtle caramel undertones provide balance and sweetness. It's reminiscent of an earl grey tea sweetened with honey. We're really excited about this coffee and really hope you enjoy it as much as we do!
