Expect notes of Pink Lady Apples & Honey
Finca Ethiopia, a 34.5-hectare farm in El Salvador's Apaneca region, was established in 2018 by Los Naranjos Coffee, formerly Finca La Gloria, the name was changed to honor coffee's origins. Only 13 hectares are cultivated to conserve native biodiversity near the Ilamatepec Volcano, with the 100% shade-grown farm bordering a protected area. Management focuses on sustainability, using soil studies for precise fertilizer and rust applications, and manual weed control to avoid chemicals.
The harvest runs from February to June, with pickers trained for optimal cherry ripeness confirmed by Brix measurements. Coffee is classified by Brix for processing: 21–30° Brix for Honey, Natural, or Experimental processes like Anaerobic Naturals. The farm uses strict quality control, including maintaining a pH of 4.05 over 72 hours for Anaerobic Naturals to ensure a very clean cup without phenolic notes. After wet processing, coffee is pre-dried before moving to raised beds at the 1400 masl mill for slower, homogeneous drying, which yields a cleaner, more stable final product.
This Gesha from Finca Ethiopia pushes boundaries by using carbonic maceration, an experimental technique that seals whole cherries in CO2-filled tanks for anaerobic fermentation. It's a process borrowed from winemaking that unleashes intense sweetness, fruitiness, and unique flavor profiles. The honey process amplifies the complexity, layering in additional sweetness and depth. What emerges are juicy, floral notes with an occasional boozy characteristic. We are really enjoying the natural sweetness from this coffee with crisp pink lady apple notes along with honey and floral attributes.
