The Alvarado Family in Rivas, Costa Rica, excels in specialty coffee, consistently planting at high altitudes, selecting unique varieties, and processing their own exceptional lots. Their ambition led to a 3rd place COE finish with their Milenio Variety, showcasing their dedication.
El Salitre, their 12-hectare primary plantation, was planted by Johnny Alvarado 10 years ago with Catuai trees at 1700-1900 masl. This young, ideally climatic farm, coupled with the family's eco-friendly practices, ensures a consistent supply of excellent coffee.
The Alvarados meticulously process this coffee using the honey method. Cherries are selected, held overnight, then pulped, leaving mucilage. Parchment is spread on raised beds, turned minimally for initial light fermentation. As it dries over 12-15 days, layers thin, and turning frequency increases. Their on-site Corazon de Jesus dry mill precisely peels, sorts, and grades green coffee for export.
We are loving the citrusy pop that we are getting from this coffee, the pomegranate notes provide a juicy and sweet cup that's well balanced with a really nice clean finish!
