Red Sun represents a coffee lot rich with narrative, resulting from a collaboration with small-scale producers who work alongside their families and neighbors. To achieve its goal of evolving standard crops into unique flavor profiles, Red Sun utilizes extended fermentation techniques before transporting the processed coffee to cooler storage environments. This specific selection is characterized by its distinct citrus qualities, particularly a bold mandarin note. This brightness is complemented by a rich caramel and vanilla sweetness, providing a memorable experience for the palate.
The production process begins with cherries undergoing a 30 to 40 hour fermentation in water-filled, sealed tanks. Following this, the cherries are depulped and subjected to a 70 to 80 hour dry fermentation. A gentle wash with minimal water follows, which is designed to keep some mucilage on the parchment. The process concludes with a careful drainage of excess water and a drying period lasting between 13 and 16 days.
