Our newest Special Special is a semi-washed coffee and is coming to you from the Huila department of Colombia. Isidro exudes the passion and happiness of someone who has found his calling in life as he describes how his father taught him to use the coffee husks as natural fertilizer. “I used most of the methods my father taught me to produce this lot,” Isidro says.
Isidro gives the utmost importance to protecting his farm’s ecosystem by using little or no chemicals to grow his coffee. He protects water sources and works with neighbors so that they do the same. “One of the most important things God has given me is the land I work on,” says Isidro. He mentions that many colorful birds bless his farm, which are healthy for his crop.
He enjoys it when roasters and buyers visit his farm to see how he processes his coffee. When asked what the most challenging aspect of processing specialty coffee is, Isidro says, “Coffee is already special. It’s the farmers that make it outstanding.”
Special Special denotes a small lot of extra special coffees either by rarity, variety, or processing.
