Now that we have been up and running for a few months, we thought we were due for a little tour of our brand new roasting space in Winnipeg! Located at 171 McDermot in the historic Exchange District of Winnipeg - Dogwood Coffee is situated in a beautiful heritage building shared with a number of fantastic roommates.
We share the main floor with Forth, a cafe serving a limited menu of breakfast and lunch items as well as Dogwood Coffee. They are open 7 days a week - 7am to 10pm Monday to Friday, and 9am to 5pm on Saturdays and Sundays. Their space offers plenty of room to catch up with a pal or stay put for a while with your computer.
Our area consists of a sectioned off packaging and office area, where the behind-the-scenes work takes place. This is where we stamp, weigh, fill and seal all the bags of coffee. Nils and Vanessa hang out back here for the most part, taking care of business and getting those bags ready to go.
In the main area is our roasting space with our beautiful P12 Probat roaster taking centre stage. Chad spends most of his days taming this beast and perfecting his roasts batch after batch.
Our training bar is open to the back of the cafe with a brand new MVP Hydra from Synesso. We have so much fun tinkering with this machine, and training on it is such a treat. Behind our training area is our cupping lab. All three of us spend a good amount of time in this room. This is where our quality control goes down using a method of coffee evaluation called cupping. We taste each coffee that we roast daily to ensure quality and consistency. A lot of slurping and discussing takes place in here.
Down the beautiful concrete staircase at the back of the cafe leads us to the lower level of our building. Walking through the atrium leads us to Lisa Kehler Art + Projects - a contemporary art gallery showcasing artists from Winnipeg and across Canada such as Suzie Smith, Paul Butler, Micheal Dumontier, Neil Farber, and Jeanette Johns among others. The gallery is open to the public from Wednesday to Saturday between 10am and 5pm.
Tucked away in the corner of the basement is Forth Bar - a cozy little cocktail bar for those who enjoy top notch mixed drinks and an intimate environment. Josie, the bar master, knows how to make everyone feel right at home and find them the perfect drink. We had the pleasure of sitting in on tastings prior to the bar opening so we feel very much at home down there in the cavernous drinking hole. The bar is open Wednesday to Saturday from 4pm to midnight.
